It seems that once leotards are on, ballet shoes are found, hair is wet and pinned back tightly and we’re running out the door, one of my ballerinas reminds me that she’s hungry.
When time allows, I like baking and having something protein-packed for my girlies for their activities. This energy bar is much faster to throw together than I was expecting: a huge plus. (I originally made these granola bars with our homemade granola here.) You can use your own homemade granola or store bought granola as the base. I used a box of granola Bobby had picked up at the store that had been sitting in the cupboard, unloved.

The recipe calls for a total of 5 cups of granola. Any combination works– 3 cups of granola, 1 cup of dried fruit, and 1 cup of nuts– it is up to you and your family’s taste.
With the wet ingredients you create a binder for the granola.
Mix and bake. That simple.
The end result?
A snack on the go packed with protein, whole grain, and dietary fiber.

(The crumbs from cutting the bars end up in a baggy to pour on top of yogurt. I’m enjoying some as I type!)
