This morning was the first since Friday that I’ve felt like myself.
After a long weekend with a migraine, I woke this morning wanting to do something special for the girls. With the kitchen a mess and untouched apples overflowing on the counter, I knew exactly what I wanted to do: make a breakfast apple crisp.
I wasn’t satisfied with the recipes I found this morning so came up with this one. It is gluten free if you use gluten free oats and, of course, calls for much less sugar than most crisps. You can really use whatever healthy flours you have on hand or omit them altogether and use more flaxmeal or other nut/seed flours. With the addition of hemp seeds and flaxmeal (or you could use chia, too) you add tons of omega 3s to the breakfast. Lots of good things in this breakfast to serve to your family.
We had our breakfast apple crisp along side a scoop of greek yogurt (27 grams of protein per cup). You can serve with whipped cream as well.
breakfast apple crisp
3-4 extra large apples–sliced very thin
splash of apple cider (or apple juice)
1/3 cup flaxmeal
2/3 cup oats
1/4 hemp seeds
1/3 cup teff flour
1/2 cup brown sugar
pinch of salt
1 stick unsalted butter, chilled, cut into bite size cubes
Preheat the oven to 375. Butter the bottom of an oven safe baking dish (9 x 13 size or around that). Layer apples in dish. Shake on cinnamon and nutmeg and toss. Add a splash of apple cider and toss. Set aside.
Mix the dry ingredients together in a bowl. Add the cold butter to the topping and mix together by hand until you have crumb-like pieces. Pour the topping over the apples. Bake for 35-45 minutes until the apples are tender. (This may vary depending on the thickness of your apples.)
The crisp will be so fragrant and delicious. I want to enjoy the leftovers with a splash of milk. And I like that it is a healthier alternative to other white flour, sugary crisps. You can really play around with the recipe based on what you have on hand and your dietary preferences.
Needless to say, we all had seconds.
