Baking for the family has slowed down considerably since I’ve really limited my grain intake this past year (for my stomach issues and weight loss), Bobby doesn’t eat grains at all, and, well, we were busy with Egypt. Breakfast is when I may crave some hearty grain, or at least the habit of eating it.
My goal has been to experiment with making our own grain-free cereal for the busy mornings when we can’t make a hot breakfast. Like this particular morning when I hope to get everyone out the door in time for strawberry picking, ballet, and so forth.
I’m amazed at how easy and healthy grain-free cereals can be! This recipe is Paleo Cinnamon Square Crunch I recently pinned. The ingredients: unsweetened coconut shreds, sunflower seeds, chia seeds, cinnamon, sea salt, maple syrup, and one egg. That’s it! You simply blend the dry ingredients, add the wet, and roll out the wet mixture between parchment paper. Cut and bake.
And it tastes really good. And such awesome ingredients.
Now that my family loves it (especially Bobby who is the pickiest), I want to experiment with my own recipes. (This morning I’ve been breaking the cereal into little bite-size pieces for Rowan. Now he’s happily covered in them and and loved it.)
