I’m sure Bobby thinks I’m crazy whenever I insist that roasted asparagus tastes like french fries. But they do, actually better than fries. I could eat roasted asparagus with every meal. The hint of olive oil rubbed onto each stalk with a bit of sea salt, and the slight smokiness from the oven…delicious.
Here’s how it goes:
Preheat over to 450. Break one asparagus to find the natural breaking spot and line that one up next to the others to trim. Lay them all out on a baking sheet, drizzle olive oil and crank some salt on top. Now rub them so they all will be lightly coated. Spread out on pan. Bake for 10-15 minutes, depending on how crisp you want them. I like them very crisp, like a good french fry is crisp.
Speaking of thing that are like french fries, how about these french fries’ party invitations that are collecting dust on the kitchen table waiting for someone to print the inside details since the printer sitting right next to me isn’t cooperating. Too bad that someone is never around long enough this week for anything, even for rolling his eyes about my asparagus and french fries comment.
