Here she is in all of her Valentine beauty. The Sandwich Cookie Pop. I’d like to be eating one right now as I type.
A strawberry-cream filling is whipped up as the cookies cool. A little filling holds one alone cookie and one cookie now baked on a stick, together. They are edible and enjoyable at this step, but the next step is dreamy.
Now the dipping in white chocolate takes some skill. I finally figured out during the midnight dipping session how to twist my wrist just so to create a “pretty” cookie. The girls would be so proud the following morning that I finished the task.
They went fast. Which, if you couldn’t tell, I’m regretting. The kids still don’t know that I sneaked three (not one, not two, but three) that same midnight that I was dipping.
Let’s just call it my payment for a lengthy valentine process for little friends that would consume theirs within 10 seconds of holding it.
