Here is something special to start out your week: blueberry butter. It is perfect for english muffins, bagels, toast, or even crackers. It takes about 5 minutes to make, too!
Blueberry Butter
2 sticks of unsalted butter, slightly softened
2/3 c. fresh blueberries, coarsely shopped
3 TBSP confectioners’ sugar (or honey for honey butter)
Combine all ingredients in food processor until mixture is well blended and fluffy. Transfer to crockery butter bell or small ceramic bowl and chill before serving. Store in refrigerator.

Mmmm! I think I’m going to try this when we’re in Colorado so I can eat it on my Mom’s bread. She doesn’t have a food processor, though- do you think it would work in a blender or mixer?
You could definitely do it in a blender. You might need to scrape down the sides more frequently. Or you could do it by hand, too. When are you going to CO?

Do you think I could use frozen then thawed blueberries? I froze loads last fall to make Jam but thought this could be something different to offer that looks great !
